STEAMED BROCCOLI WITH OLIVE OIL AND PARMESAN
This recipe is simple, yet a delicious and healthy side dish.
1-1/2 pounds fresh broccoli
3 T. olive oil
3/4 cup freshly grated Parmigiano-Reggiano cheese
Salt to taste
Pepper to taste
Cut stalks from broccoli and peel, trimming away fibrous parts.
Cut into 1/2 inch-thick matchsticks. Cut broccoli heads into 1-1/2
inch wide florets.
Steam broccoli in a steam rack set over boiling water, covered,
until tender, 5 to 6 minutes.
Transfer to a bowl and toss with oil, cheese, salt and pepper.
Makes 4 servings at 300 calories each.
