SPINACH WITH GARLIC VINAIGRETTE

1-1/2 T. extra virgin olive oil
1 T. white wine vinegar
1/2 t. Dijon mustard
1/4 t. finely ground black pepper
1/8 t. salt
2 cloves garlic, minced
6 cups baby spinach
1/4 cup thinly sliced red onion

Combine the first 6 ingredients in a large bowl, stirring well with a whisk. Add spinach and red onion and toss to coat well.

Makes approximately 4 servings with 66 calories in each serving. ENJOY!

BTW, I have planted a little BASIL, MINT AND ARUGULA in containers on my deck, so maybe I can develop some new recipes to share with you. PLANT SOMETHING---it will give you that connection to nature and is very grounding. Plants like these can all be grown in containers and are low maintenance (which I love,) even in small spaces.
