SOUTHWESTERN SOUP

This is a recipe that I tried for the first time last week. It is similar to chili, yet has a different flavor and of course, is easy! I substituted ground turkey breast for the beef and chicken stock instead of beef stock. Lowers the calories even more and works well.

1 lb. ground beef or turkey
1 cup chopped onion
2 cloves garlic, minced
2 cans kidney beans or 1 can kidney beans and 1 can black beans
2 14.5 oz cans diced tomatoes and green chiles, undrained
1 can beef or chicken broth
2 cups frozen corn
1 envelope taco seasoning mix
1/2 t. salt
1/2 t. pepper
Fresh cilantro

Brown beef or turkey, onion and garlic in a large Dutch oven over medium high heat, stirring often until meat crumbles and is no longer pink and onion is softened; drain if necessary.

Stir in beans and next 8 ingredients. Add 4 cups water (I think I added a little less.) Bring to a boil over medium high heat. Cover and reduce heat to low and simmer for 30 minutes.

Stir in cilantro just before serving. You may also use toppings such as sour cream, cheese, tortilla chips, green onions, etc. Serves 6. ENJOY!
