Simple Spaghetti Squash

1 spaghetti squash, halved and seeded 1 cup cherry tomatoes, halved
1 zucchini, julienned 1 T. white-wine vinegar
1 sweet red pepper, julienned 1 T. minced basil
1 t. olive oil 2 t. minced oregano
2 cloves garlic, minced 1/4 t. ground black pepper
2 T. grated Parmesan cheese  


Microwave squash halves on high for 4 minutes. Let stand for 5 minutes. While the squash is cooking, saute the zucchini and peppers in the oil for 3 minutes. Stir in the garlic and cook for 1 minute. Add the tomatoes, vinegar, basil, oregano and black pepper; saute for 2 minutes.

Using 2 forks, fluff the flesh of the squash into strands. Add to the pan of sauce and saute for 3 minutes. Sprinkle with cheese. Serves 4
