SESAME-MISO CUCUMBER SALAD

This is a very easy yet delicious recipe that I made this last week. I have been buying fresh cucumbers at the farmer's market and wanted to try something a little different and enjoyed this a lot. Hope you do, also.

1/2 T. sesame seeds, toasted
2 T. white miso or lower-sodium soy sauce (I used soy sauce, did not have miso.)
1 T. rice vinegar
1 T. honey
1 T. hot water
1 t. crushed red pepper
2 t. dark sesame oil
4 cups thinly sliced seeded cucumber

Combine first 7 ingredients in a large bowl, stirring with a whisk. Add cucumber and toss to coat. Serve chilled.

Makes 6 servings at 60 calories each.
