Preheat oven to 400 degrees. Toss vegetables in 2 T. olive oil. Place
on broiler pan and roast for 30 minutes, stirring several times. When almost
done, toss vegetables with 1 tsp. each, fresh garlic, fresh rosemary or basil
and balsamic vinegar. Return to oven for 5 more minutes, sprinkle with salt
and pepper, if desired and serve.
