Ricotta with Jalapeno Spread/Dip

Here is a recipe that can be used as a dip, between meal snack or light lunch with a salad. It is delicious, yet easy, low fat and low calorie.

15 ounces part-skim low fat ricotta cheese
1/ 2 cup pickled jalapenos, carrots and onions, drained and chopped
2 T. finely chopped cilantro
1/2 t. salt
1 t. freshly ground black pepper

Mix these ingredients together and set aside.

Next, heat a grill pan over medium heat. Arrange 6 white corn tortillas in a single layer on the pan. (If you need to use a smaller pan, heat the amount of tortillas your pan can hold.) Cook until the tortillas are crisp, about 4 to 5 minutes per side. Serve the grilled tortillas with the ricotta spread. Makes approx. 8 servings with 125 calories each. EASY AND YUMMY!
