1 1/3 teaspoons olive oil
1 cup onion
2 medium green bell peppers, seeded and chopped
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
2 cloves garlic
3 cups Boca Burger crumbles (or lean ground beef or turkey.)
3/4 cup water
2 cups canned crushed tomatoes (I use tomatoes with chilies)
1 cup kidney beans
Low fat Monterey Jack cheese, grated
In a large non stick pan, heat oil over medium heat. Saute onion
and green pepper for 5 minutes. Add chili powder, cumin, salt and
garlic. Cook another 2 minutes. Add Boca Burger crumbles or meat
and water. Stir in tomatoes and beans. Cover and simmer approx.
30 minutes. Serve with grated cheese. Serves 2 to 3 people.
