1 cup halved grape or cherry tomatoes
1/2 cup English cucumber
1/4 sweet onion
1 red bell pepper, finely chopped
1/2 cup fresh mint, chopped
1/2 cup fresh parsley, chopped
1 T. garlic, minced
! T. fresh ginger, minced
1/2 cup olive oil
2T. raw soy sauce
1/4 cup fresh lemon juice
1 T. jalapeno, minced (optional)
1/4 cup raw sesame seeds
Mix all ingredients in a large bowl. If I am not going to eat it right
away, I make the salad and dressing separately and add dressing
when I am ready to eat. Makes 4 servings.
