This is a very good hot weather finger food and you can utilize fresh
tomatoes, cucumbers, and basil.
3 large tomatoes, chopped
1/2 medium cucumber, julienned and cut into 1/4 in. cubes
1/4 cup thinly sliced red onion
3 T. fresh basil, torn into large pieces
3 T. red wine vinegar
11/2 T. olive oil
salt and pepper to taste
whole wheat baguette, cut into 1/2 in. thick slices
extra basil leaves
Toss first 6 ingredients in a bowl; season with salt and pepper; let
stand for 30 minutes. Drizzle bread with 1 T. liquid from mixture;
broil each side until golden and top with 2 T. tomato mixture.
Garnish with basil leaves.
Serves 4 with 283 calories per serving. ENJOY!
