Lemon Tarragon Chicken

2 medium size lemons 4 boneless chicken breasts
1 T.chopped fresh tarragon or 1/2 t. dried 1 clove garlic
2 t. olive oil salt and pepper


Grate 2 t. lemon peel. Thinly slice half of other lemon and reserve slices for garnish.

Squeeze juice from remaining 3 halves into small bowl and add lemon peel, tarragon, olive oil, salt , pepper and garlic.

Toss chicken. Place chicken in hot skillet and cook for 5 minutes, brushing with remaining lemon juice mixture in bowl. Turn chicken over and cook 5 more minutes or until done. Garnish with lemon slices. Enjoy!
