KEY LIME PIE

This recipe may not be TOTALLY healthy, but is quick and can be enjoyed on these hot days of summer

1 14 ounce can fat-free sweetened condensed milk
1/4 cup egg substitue
1/2 cup FRESH key lime juice
2 teaspoons key lime zest
1 reduced fat ready-made graham cracker crust
1 8 oz. container fat free frozen whipped topping, thawed
Garnish, lime peel strips

Preheat oven to 350 degrees. Whisk together first 4 ingredients until well blended. Pour mixture into pie crust, place pie on baking sheet. Bake at 350 degrees for 17 minutes or until pie is set. Remove pie from baking sheet to a wire rack and let cool for at least an hour. Chill 3 to 24 hours. Top with whipped topping just before serving. Garnish. You may substitute regular lime OR lemon juice, if desired. Enjoy!
