2 large cucumbers, peeled, seeded and chopped
1/4 cup lemon juice
salt to taste
water to thin
1 avocado
1 scallion, chopped
1/4 cup fresh mint or dill
Combine all ingredients except the scallions and herbs and
blend in blender or food processor until smooth. Add the scallions
and herbs and pulse blend, leaving the greens in small pieces.
