BALSAMIC GARLIC CHICKEN BREASTS
4 skinned and bones chicken breasts
1 t. salt
1 t. pepper
2 T. butter
1 T. olive oil
1/4 cup chicken broth
1/4 cup balsamic vinegar
1 T. fresh lemon juice
3 garlic cloves, chopped
11/2 t. honey
Sprinkle chicken with salt and pepper. Melt butter with oil in a large skillet over
medium high heat; add chicken and cook for 6 to 7 minutes on each side or until
done. Remove chicken and keep warm. Add broth and next 4 ingredients to skillet
and cook for 5 minutes or until slightly thickened, stirring to loosen particles from
bottom of skillet. Serve the chicken with sauce over brown rice or pasta of your
choice. ENJOY!
