APPLE, CELERY, GRAPE AND WALNUT SALAD

The following recipe is sooooo simple, delicious, low in calories yet, filling. It is a great way to get fruit, healthy nuts and some veggies into your eating plan. This recipe serves 2, but can easily be increased.

Calories: 108 per serving.

APPLE, CELERY, GRAPE AND WALNUT SALAD

1 crisp apple
2 T. raw walnuts
1/3 cup grapes
1-1/2 stalks celery
2 T. reduced fat mayonnaise
1 T. fresh lemon juice
salt and pepper if desired.

Wisk together the mayonnaise and lemon juice, salt and pepper to taste, until combined.

Cut celery and apple into julienne strips about 1-1/2 inches long. Toss together the apple, walnuts, grapes and celery with the dressing. ENJOY!!
