Apple and Cheese Breakfast

1/4 cup water
1/4 teaspoon cinnamon
1 tablespoon raisins
1 apple, cored, halved and cut into slices
1 tablespoon slivered almonds
3 oz. low fat mozzarella cheese, grated

In a 9 inch skillet, add water, cinnamon and raisins. Peel apple, if desired. Halve apple and scoop out inner core, slice and add to skillet. Cover and bring to boil. Reduce heat and simmer for 4 to 6 minutes, until almost tender and water has evaporated. Grate cheese. Remove lid from skillet, sprinkle nuts and cheese over fruit. Cover and simmer for 2 to 3 minutes until cheese melts and remove from heat. Serve immediately. ENJOY!
